■ Chicken Curry: A classic Old Sinhalese–style chicken curry prepared without coconut milk.
Much like miso soup in Japan, chicken curry in Sri Lanka varies from household to household.
Our version follows a recipe learned from a grandmother, featuring a gentle tang from vinegar that
brings a refreshing depth to the curry.
■ Parippu Curry with Lentils and Flowering Wasabi Greens: A simple lentil curry topped with sautéed wasabi greens, which add a pleasant spicy bite, and Maldives fish for a rich umami accent.
■ Omelet Curry with Alpine Leek: A fluffy omelet—characteristically flavored with green chili—is prepared with seasonal alpine leek and lightly simmered in a rich gravy made with roasted curry powder.

９ Side Dishes

■ Cherry Salmon Ambul Thiyal: Cherry Salmon slowly simmered with goraka, prepared in the style of Sri Lankan ambul thiyal. Like Japanese tsukudani, it is a dish traditionally enjoyed as a preserved accompaniment.
■ Red-Soil Baby Potatoes and Mountain Vegetables Thel Dala: Baby potatoes from Nagasaki pref. grown in red soil are stir-fried with seasonal mountain vegetables and Maldives fish.
■ Bamboo Shoot Thel Dala: Prepared bamboo shoots stir-fried in mustard oil, finished with a house-made spice blend featuring Nepalese sansho pepper.
■ Pickled Okinawan Shallots Achar: Fresh seasonal shima-rakkyo from Okinawa marinated in our house pickling liquid.
■ Stir-Fried Okahijiki: Crisp okahijiki simply stir-fried with mustard seeds, salt, and pepper.
■ Marinated Red Cabbage with Cumin: A refreshing red cabbage marinade delicately scented with cumin.
■ Whitebait and Spring Vegetable Sambol: Lightly fried whitebait combined with seasonal vegetables such as snow urui, boufu greens, and sweet high-sugar cherry tomatoes called Amaenbo, creating a sambol that captures the flavors of spring.
■ Fresh Vegetable Coconut Sambol: A bright and refreshing coconut sambol made with tender vegetables such as mini daikon, radish, celery, and Edo-style herbs.
■ Seasonal Small Fish Fry: Small fish coated in our house-made spiced flour and fried until crisp.
