June is nearly end, the seasonal ingredients have shifted to summer.
The change in the season is quite visible when you look at the seasonal ingrdients at the market.
Different from the Srilankan curry that we serve monthly, Thai curry uses various types of fresh herbs along with the various spices.
The combination of different herbs in the homemade curry paste result as different Thai curry such as Green curry, Red curry, etc.
Adding coconut milk into the homemade curry paste brings some fusion of sweetness and spiciness resulting as providing authentic Thai flavor.
With hot summer arriving in Japan, how about some Craft Thai Curry using various spices and herbs to maintain your health with the changing season?
The Craft Thai Curry of July 2026 will be Spicy Thai Curry using Chicken leg of Daisen Chicken with seasonal summer ingridients – Fragrant with Spices and Thai Herbs using ingridients from the market carefully selected by our chef.
Same as the Srilankan Curry we serve monthly,

■ Spicy Curry with Daisen Chicken Leg
A slightly spicy curry that brings a refreshing lift to the early summer heat.
This curry has a light, soup-like texture, created by slowly sautéing onions and spices until their flavors are deeply developed.
This chicken curry is said to have been introduced through Indian communities in southern Thailand.
The bone-in chicken leg can be enjoyed by removing the meat and eating it as is, or by shredding the tender chicken and soaking it in the flavorful curry broth.
The ingredients are kept simple with egg and potatoes, and unlike many Thai curries, this dish is made without coconut milk.
■ Yam Makua (Thai Grilled Eggplant Salad)
“Yam Makua” is a Thai-style salad featuring grilled eggplant.
Tender minced meat, soft and creamy grilled green eggplant, fresh herbs and vegetables such as coriander and red onion are tossed together with a dressing that combines the savory saltiness of fish sauce, the aroma of garlic, and the fresh heat of chili.
For this dish, we use Ao-Toromi eggplant, a variety that develops a rich and delicious flavor when grilled.
